Lately I have taken a liking to salads. That is after my stint with Keto. Having nothing to eat I took to salads and really started enjoying them. I mean they were quite versatile and you had the liberty to throw in a few things, and did not need to cook them (most of the time), and you could make the dressing as hot and spicy or as mild as you liked it.
So there the story goes.
I am sharing with you one of my favourite salads which I had during the keto days. Bacon used to make me feel good and so one day I added it into the salad, and it really instantly made me feel great!
Time taken – 5-7 minutes
2 cup salad leaves
3-4 strips of bacon
Mixed bell pepper chopped into chunks about 4 tbspn
Pine nuts 2 tbspn
a small strip of cheddar chopped into cubes
one cucumber diced into chunks
For the dressing
1 tspn olive oil
1 tspn lemon juice
1/4 tspn garlic powder
1 tspn crushed chillies
1/4 tspn honey (optional)
Mix all the ingredients of the dressing and shake them well
On a pan fry the bacon
Mix the salad leaves and everything together
Drizzle the dressing and munch on.
