I am actually racing against time …… no, my battery.

Just 5% to go, and I swear I am lazy at 11.15 pm to go get the charger.

Baked chicken and cheese nuggets

Preparation time – 20 minutes

Cooling time – 1 hour

Baking time – 25 minutes


500 grms mince chicken

½ cup cheddar cheese

2 tbspn chopped coriander leaves

½ cup grated carrots

½ cup grated zucchini

½ tspn black pepper powder

2 eggs

2 cups of multigrain bread crumbs

Salt as per taste


In a pan cook the mince chicken along with carrots and zuchhini and coriander leaves

Add salt and cook till dry

Add the black pepper powder

Once cooled put everything in blender and blend into a smooth paste

Add cheese and one egg and mix well

Make a eggwash

Shape the mix into nuggets (I used a star cookie cutter)

Dip into eggwash and coat with breadcrumbs

Flash freeze or chill for at least an hour

Spread on a baking sheet sprayed with olive oil spray and spray over the nuggets too

Preheat oven to 180 deg cel and bake for about 20-25 minutes
