CHILLI SALAMI OMELETTE

Eggs are a superfood.  Period.  Besides that I love eggs, and therefore can eat them for all meals of the day, and besides all of this they are sooooooo incredibly, super-duper versatile.  I mean what is it that you cant do with an egg.  Cakes, cookies, curries, boiled, raw, half done, full done  – the list is endless.

That’s my take on eggs, but today I would really like to give away some valuable information on eggs.  They are inexpensive form of a protein rich diet.

A single large boiled egg contains

Vitamin A: 6% of the RDA.

Folate: 5% of the RDA.
Vitamin B5: 7% of the RDA.
Vitamin B12: 9% of the RDA.
Vitamin B2: 15% of the RDA.
Phosphorus: 9% of the RDA.
Selenium: 22% of the RDA.

Eggs also contain decent amounts of Vitamin D, Vitamin E, Vitamin K, Vitamin B6, Calcium and Zinc.
All this comes with 77 calories, 6 grams of protein and 5 grams of healthy fats.

So usually I’d very comfortably pick up an egg for breakfast any day.  So when a few days ago I was craving for a very spicy breakfast this is what I made.

Time taken – 3 minutes 

Serves – 1 

Ingredients 

1 egg (or if you desire to have more please do)

1 tbspn of sliced salami (I used chicken)

5-6 jalapenos in brine

a big pinch red chilli flakes

a big pinch oregano

1 tspn finely chopped capscium

1 cheese cube

Method 

Saute the salami slices for about a minute with a little butter and keep them aside.

Beat the egg with salt and pour it in the pan.

Sprinkle the egg with the salami, oregano, chilli flakes, capsicum and break the cheese cubes over the omelette.

Cover and cook till well done which will take about 2-3 minutes.

Enjoy with a hot cup of chai and some brown bread.
