When life gives you chocolate – you should make cookies, and that too double chocolate cookies.
Last month when Jeanne of Epicurious Hedgehog, manufacturers of top quality essences touched base with me regarding her products, I was thrilled to receive a whole set of their fragrant essences and cocoa powder. I absolutely had to do something with them, and then thought what could be better than double chocolate cookies.
Honestly, the cookies were better than I expected. I guess that’s what happens when you use the best quality ingredients.
They were gone in a jiffy.
Prepration time – 15 minutes
Baking time – 10 minutes
1 cup butter softened
1 1/2 cups white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
2/3 cup cocoa powder
3/4 teaspoon baking soda
1/4 teaspoon salt
2 cups semisweet chocolate chips
Preheat oven to 350 degrees F (175 degrees C).
In large bowl, beat butter, sugar, eggs, and vanilla until light and fluffy.
Combine the flour, cocoa, baking soda, and salt; stir into the butter mixture until well blended.
Mix in the chocolate chips.
Leave the mixture for 10 minutes in the fridge
Drop spoonfuls onto the sheet
Bake for 8 to 10 minutes in the preheated oven, or just until set.
Cool slightly on the cookie sheets before transferring to wire racks to cool completely.
