Vendakaa pachadi – no no that is not the name of a space ship, it is the name of a simple south indian vegetarian dish.
Somethings in life are simple, and so is this flavourful dish. It is a must make for a malayalee sadya (a kerala vegetarian feast) and believe me it gets ready in a jiffy, or so……
Serves – 4
Time taken – 10 minutes
250 grms bhindi / okra / lady finger / vendakaya
250 grms yoghurt
2 dry red chillies
1 tbspn curry leaves
1/4 tspn mustard seeds
salt to taste
2 green chillies
Wash and chop the vegetable in slices
You can either saute the okra, or bake it or sinfully deep fry it (the last one being the best)
Keep it aside
In a pan add a tspn of oil (if you can use coconut oil) add the mustard seeds when hot, when they sputter add the green chilli, red chilli and curry leaves.
Switch off the flame add the yoghurt and salt and stir well.
Add the Okra and mix well.
This is not the authentic way of making pachadi, but it is my way!
Enjoy it with roti as a side or part of the sadya.
