ZUCCHINI AND CARROT WHEATFLOUR CAKE

No I havent gone crazy.  I am reiterating it so that I dont fall into the trap once again, and keep the committment of posting regularly.

So to make up for lost time, at least convince myself that I am doing so I am going to be posting one post after the other, and one more!

Here’s the first one.

A lovely cake, delicious yet healthy – a reaffirmation that you can eat yummy yet delicious food

Carrot and Zucchini Cake 

Time Taken

Preperation – 15 Minutes

Baking – 45 minutes

2 cups wheatflour

1.5 cup grated carrot

.5 cup grated zucchini

1 tspn cinnamon powder

¾ cup soft brown sugar

¼ cup regular brown sugar

2 eggs

¾ cup vegetable oil

¼ cup chopped walnuts

2 tspns baking powder

¼ tspn baking soda

1 tspn vanilla essence

½ cup milk

Method

In  a pan beat the beat the eggs sugar and oil together

Add the carrots and zuchnni and beat

Sperately mix the wheatflour, baking powder and soda

Add these to the wet ingredients and mix well

Add milk to make into pouring consistency

Add the walnuts and stir well

Grease a pan and pour batter into it

Bake for about 45 minutes or tooth pick comes out clean

Decorate it with a few white or brown chocolate chips.

Enjoy this cake guiltfree !
